Ingredients
- 1 Pack - Tempeh
- 1 Bottle - Dark Beer
- 1 Large - Onion
- 3 Cloves - Garlic
- 2 Tbsp - Olive Oil
- 1 Can - Red Kidney Beans
- 1 Can - Pinto Beans
- 1 Can - Corn
- 1 Can - Diced Tomatoes
- 1/3 Cup - Ketchup
- 1/4 Cup - Hoisin Sauce
- 1 Pack - White Mushrooms
- 2 Tbsp - Chili Powder
- 1 Tbsp - Cumin
- 1 Tsp - Garlic Powder
- Salt & Pepper
Directions
- In a large pot, heat oil over medium heat and cook onions for a few mins
- Add sliced mushrooms, crumbled tempeh, garlic and spices for ~5 mins
- Add beans, tomatoes, corn, ketchup, hoisin and beer and simmer for ~40 mins partially covered
- Serve and garnish with cilantro
